Add your authorship for Zenodo's archived version (DOI'd)

I've enabled DOI minting with Zenodo and added a citations file, so that the RProvider can be more easily referenced in academic papers.

I didn't want to add authors without consent to the list, so have currently placed a catch-all "RProvider contributors" to the citations file. If you have contributed and wish to be listed as an author within academic citations, please update the citations file with your information.
