Make the calendar look better in dark mode

I think some parts of the fullcalendar component might use the same colors for dark and light mode, which makes the contrast for the dark mode version really sharp. If some of the border colors could be reduced that would make it look much better. It would also be nice if the colors we assign to the events themselves were responsive to the theme, which is probably best done by putting the event colors as tailwind variables.
