docs: Provide information about Request & Response-Logging

Hello,
please please please provide some prominent (I would suggest in the main README/Homepage) Information about how to enable/disable automatic wire Request/Response Logging.

Any developer needs this sooner or later. And I was not able to find any information and I am still searching, how this can be done (declaratively via config, not via code)?
