@grulja this is somthing that you can maybe add to your todo-list:
double clicking on a file to open it, results in a popup that lets the user choose which application to use,

although a default application for opening this sort of file (lets say *.txt), is already defined and used by dolphin which is from the distro repos (Fedora 29).

Would be nice if the flatpak'd dolphin would make use of the applications that are set es default for opening any filetypes

Here is a screenshot of a right click on a .txt file when using dolphin from flathub,

as you can see, no default application is defined (in fact it is, but the flatpak'd dophin does not make use of it)
here is one when using dophin from the fedora repos.
