Version metadata mismatch: manifest says 0.54.11 but bundles 0.56.5

### Description
The user-facing version metadata on Flathub/Flatpak is currently out of sync with the bundled package. While the latest commit correctly downloads and bundles Anytype `0.56.5`, the AppStream metadata / version tag remains statically set to `0.54.11`.

Running `flatpak remote-info` shows the mismatch where the Version is reported as `0.54.11` but the underlying commit subject is `0.56.5`:

The version string in the Flathub metadata/manifest should be updated to `0.56.5` to match the actual bundled binary version.
