[Feature] Update incremental partition from daily to weekly in iterable__events

Following the updates from https://github.com/fivetran/dbt_iterable/pull/51, modify [this incremental partition](https://github.com/fivetran/dbt_iterable/blob/e446d714c45f07444eb33297f23be9909fb0c445/models/iterable__events.sql#L17-L20) to be weekly as opposed to daily.
