🐛 [Firestore-BigQuery-Export] Version management with stable version

Hi guys,
I would be happy about a version management.
When I install the extension I would like to have a selection of extension versions.
In the best case the extension suggests a stable version.
Then you can decide for yourself whether you want to use the latest version or the last stable version.

This has the advantage that new functions that are perhaps not yet fully developed are not immediately released to everyone.
