nuget shield in readme doesn't report a version number

The readme shields are not able to track the real versions we're using in this repo:

(is v1.2.3 the default if not found?)

Rather than providing in correct information we should customise them (or remove).

Start in the repository README and inspect the NuGet shields shown in the issue, then compare their configured versions with the versions used in the repository. Done means the shields report the actual versions or are removed, with the rendered README checked for accurate information.
