Envoy Gateway is adding support to copy Input metadata (Gateway API resource `kind`, `name`, `namespace`, `annotations`) into Output (xDS config, Telemetry/Access logging) using the `metadata` field https://github.com/envoyproxy/gateway/issues/3318

A tool that can map output attributes such as Access Logs and xDS config to Input will be very useful is debugging issues related to traffic
