Remove `$server_port from` Host header in nginx reverse-proxy example configuration

(I opened a pull request, but the CLA required my legal name which is not acceptable to me. Please ignore that one.)

Based on what has been said in https://github.com/element-hq/synapse/issues/18359, `setting proxy_set_header Host $host;` fixes the example nginx configuration not being compatible with SSO authentication.
