Remove elasticinframetrics processor from EDOT

The component is already deprecated and not in use any more. This issue suggests removing it from EDOT entirely.

Start at internal/edot/components.yml around line 81 and search the EDOT configuration for other references to the elasticinframetrics processor. Remove its EDOT entry and verify that no remaining EDOT references depend on it; the work is done when EDOT no longer includes this deprecated, unused component.
