Description

The official [Support matrix](https://www.elastic.co/support/matrix#matrix_compatibility) currently refers users looking for EDOT compatibility to the [Elastic OpenTelemetry compatibility and support](https://www.elastic.co/docs/reference/opentelemetry/compatibility/index.html) docs (and, by extension, to the [Elastic OpenTelemetry compatibility and support for OTel Collectors](https://www.elastic.co/docs/reference/opentelemetry/compatibility/collectors) doc for the collectors).

We need to review if we can/want to move this content to the Support matrix and remove it from the docs to avoid having multiple sources of truth for Elastic product compatibility. Users should be able to find all the necessary compatibility information in the official Support matrix.
