[Fleet][Bug] View Collector documentation is outdated and does not reflect the 9.5 UI changes

### Description
- The View Collector documentation has not been updated to match the changes introduced in Elastic Stack 9.5. The current documentation does not reflect the latest UI structure and is missing details for the newly introduced sections.

### Actual Result

- The documentation does not match the current Fleet UI. In 9.5, the View Collector page is organized into three main sections:
- Health
- Info
- Config

Each of these sections contains additional subsections and information, which are currently not documented.

### Expected Results

The View Collector documentation should be updated to reflect the 9.5 UI and include comprehensive information for:

- Health section and its subsections
- Info section and its subsections
- Config section.
