[Internal]: Reference new Serverless console quickstarts from docs

### Description

Quickstarts derived from documentation have been integrated in the Elasticsearch Serverless home page as Dev Console scripts per https://github.com/elastic/kibana/pull/230481

The quickstarts should make mention of this and note/address any differences (e.g. smaller data sets).

There was also some feedback that the example in https://www.elastic.co/docs/reference/query-languages/esql/esql-search-tutorial#use-query-string-for-complex-patterns might need clarification:
