Create PDFs of the Docs

## Description
Currently, we provide offline versions of Elastic Documentation, but we should also provide users with dedicated PDF versions. Creating PDF versions would enhance accessibility for users who prefer static, printable documentation or who may need offline access in PDF format for ease of use. This addition would align with common documentation practices and improve the overall user experience.

## Tasks

- [ ] Evaluate tools or workflows for generating PDFs from the existing documentation structure.
- [ ] Define the scope and content to be included in PDF versions (e.g., full docs, specific sections).
- [ ] Implement the necessary pipeline or tooling to generate and publish PDFs alongside existing offline documentation.
- [ ] Test and validate the PDFs for formatting, usability, and completeness.
