input/elasticapm: generate Compound Schema Documents (JSON-Schema)

Description
We currently generate multiple JSON Schema documents. These are synchronised to APM Agent repos for testing, which requires having to list out each file. We should look at generating a single compound (bundled) JSON Schema document to simplify this: https://github.com/elastic/apm-agent-python/pull/1745#discussion_r1100809701
