Description
The OTel bridge currently tests only the minimal supported version - 1.0.0.
We need to add tests for the latest version as well.
This requires proper update of `dependabot.yml` to update both `opentelemetry-api` and `opentelemetry-semconv` while ignoring version 1.0.0
