Replace unoconv with libreoffice or unoserver

Unoconv has been rewritten and is now named [unoserver](https://github.com/unoconv/unoserver/). The docker images and default configuration should be changed accordingly.

Or just use libreoffice directly, which is probably easier to setup (with the downside of having less efficient conversion of many files).
