Description
Would be nice to have a small wrapper for sapply() to run on dataframes to do things like:
mtcars |>
data_apply(as.factor, exclude="mpg")

Research direction
Start by locating the existing dataframe transformation entry points and tests, then compare the requested data_apply() behavior with R's sapply(). Check how the mtcars example should handle exclude="mpg"; done means a dataframe wrapper applies the function to the intended columns while leaving excluded columns unchanged.
