Atualizar as tasks de atualização de dependências do projeto para o `poetry-plugin-up`

Na base do projeto, temos alguns scripts que fazem bumb das dependências. Como o `poetry-plugin-up` agora suporta o poetry 2, seria interessante e facilitaria bastante a manutenção dos bumbs
