Description
I havent found any solid documentation, so I'm not sure if there is any support for this.
Is there anyway to use DSC to manage a Sql Server on Linux instance?
I saw that there was an open ticket to add SQL Auth for the connection, but that looks like it was last updated 2017

Start with the repository documentation and existing DSC resources to determine whether SQL Server on Linux is currently supported. Investigate the referenced SQL Authentication work and the resource connection assumptions; the issue is done only when Linux support is either clearly documented or its implementation scope is defined.
