Following up from https://github.com/docling-project/docling-core/pull/182
- [ ] Text wrap is also applied on list items
- [ ] Underscore escaping is also applied to plain URLs (desired behavior to be clarified)
- [x] Test data construction uses PARAGRAPH instead of TEXT
