Drag-drop reorder for collection not working on iOS

### Describe the Bug

When using iOS (iPad / iPhone), you cannot reorder the items in a collection with a sort field.
The two lines appear in front to grab, but click and hold does not give the ability to move it up/down the list.
Both latest version of Safari and Chrome do not work, browser makes no difference.
The directus app (https://directusmobile.app/) is also not working.

I am using Directus via deploy on Railway from this template:

### To Reproduce

1. Log in to directus and create a collection in settings
2. Give the collection a sort field, so that it is sortable
3. Open Directus on mobile (iPad / iPhone) iOS
4. Reorder using drag/drop does not work

Start by reproducing the collection sort drag-and-drop failure on an iPad or iPhone in Safari and Chrome, using Directus v11.17.4; the Directus mobile app is also reported as affected. Trace the collection reorder interaction from the admin interface, then verify that sorted collection items can be moved up and down on iOS without regressing other browsers.
