Need to re-pin images: New major version for "Anaconda" and "Miniconda" images

📢 We have released a new major version for the "Anaconda" and "Miniconda" images (i.e., [mcr.microsoft.com/devcontainers/anaconda](https://github.com/devcontainers/images/blob/main/src/anaconda/history/1.0.0.md) and [mcr.microsoft.com/devcontainers/miniconda](https://github.com/devcontainers/images/blob/main/src/miniconda/history/1.0.0.md)).

To keep up to date, we recommend using partial version numbers. Use the major version number to get all non-breaking changes (e.g., 1-) or major and minor to only get fixes (e.g., 1.0-). **As a new major version is released, we recommend pinning to using the new version `1` to continue receiving security updates and enhancements for these images.**
