Support logging

I would like to simulate metrics, traces, and **logs**.

**Describe alternatives you've considered**

Combining tools like [flog](https://github.com/mingrammer/flog) and an actual OTEL collector w/ filelog receiver.

**Additional context**

This tool is very useful for quick telemetry simulation, would be great if we could simulate all three pipelines.
