Provide uds-config.yaml schema

There are published schemas for [uds-bundle.yaml](https://github.com/defenseunicorns/uds-cli/blob/main/uds.schema.json), [zarf.yaml](https://github.com/defenseunicorns/uds-cli/blob/main/zarf.schema.json), and [maru tasks](https://github.com/defenseunicorns/uds-cli/blob/main/tasks.schema.json), all of which make my yaml lsp happy. Could we also make my yaml lsp happy when I'm looking at a uds-config.yaml by publishing a schema for it?
