Clarify reason for using DOCX

Description
Should write a blurb in the README about why I chose to use DOCX for this instead of e.g. LaTeX. I remember reading that PDFs generated from LaTeX were more difficult for ATSs to parse than DOCX (and maybe even PDFs generated from DOCX files).
