Add athena support for python models

This github issues calls out a couple of things related to the athena adapter and python models doc:

- [Athena spark supports python models](https://docs.getdbt.com/reference/resource-configs/athena-configs#python-models) and we should update the [Python docs](https://docs.getdbt.com/docs/build/python-models) to reflect that using the content in the athena configs doc. Note that that page is also not an extensive list because it doesn't include all the adapters in our ecosystem that run spark.
