Explaining workflow concept and table structure in this solution with real scenario sample

I will appreciate it if you could guide me about concept of workflow in this project. I mean in real scenario, for example student registration for university with several steps of approve. how to start, what is the first workflow status, how should be waited for the first user to approve. Then what is happened in database. After that waiting for second user to approve task or request by doing action. what is the meaning of all workflow status in this project. runnable, suspended, etc. when is each status changed? Is it possible to have real sample project like university registration or applying for university in .net core platform. Is there any document for database structure and description of tables like workflow, subscription, scheduledcommand etc.
