QA: Investigate the need for `generate_schema_name`

Coming from [Using dbt with CrateDB](https://community.cratedb.com/t/using-dbt-with-cratedb/1566), we are adding the details about `generate_schema_name` to the documentation instead of into the dbt-cratedb2 package.
