touch: setting times of 'XXX' : No such file or directory

For the greater context, I'm trying to run Nextcloud:
- Podman 3.0.1(rootless)
- Debian 11 (Linux kernel 5.10.0-26-amd64 x86_64)
- storage volume hosted over NFS (mounted with systemd)

It was suggested I look into fuse-overlayfs, and while I've been making inches of progress unguided, I'm focused enough of a question that my 1/3 to 1/2 of my search results are in Chinese.

So far, I've tried rebooting (both NFS client and server) as well as making sure both systems' clocks are adjusted from Daylight Savings Time ending.

Start with startfuse.sh and the captured fuse-overlayfs debug output, then reproduce the failure by running touch helloWorld on the mounted photoMountpoint. Compare the reported upperdir, workdir, lowerdir, and mountpoint with the Podman, Debian, kernel, and NFS details; done means identifying the cause of the CREATE failure and documenting or confirming a fix.
