Description

Describe the Current Behavior/Feature:

Given we now have access to a library like React Query in the project, think we could optimize our data flow similar to how Contact List was done with the useContactList hook. It'll also help concentrate where the functions would be for Document List.

Proposed Behavior/Feature:

Similar to how our data flow for Contact List has been moved from React Context to a custom hook with React Query, a similar process would be done for Documents List.
