Feature request: Add an excludeQueries list to exclude certain queries from the default monitoring queries set

In the operator helm chart it would be nice to be able to list queries that you want to be excluded from the default monitoring queries configmap.

Start in the operator Helm chart by tracing how the default monitoring queries ConfigMap is generated and how chart values are exposed. Add an excludeQueries value that removes selected default queries, then verify the rendered ConfigMap contains the remaining queries.
