Replace cChoco DSC documentation with Chocolatey Module

## What New Or Updated Would You Like To See?

Chocolatey-Module is the replacement DSC resource for cChoco. Once migration documentation is prepared, we need to update references.

## Why Is It Needed?

We will need to point folks to the new DSC resource so they are working with a maintained solution, rather than something that will no longer receive updates and fixes.
