Evaluate uv to replace poetry

[uv](https://github.com/astral-sh/uv) is a package and project manager for Python. The idea is to have _a single tool to replace pip, pip-tools, pipx, poetry, pyenv, twine, virtualenv, and more._

These tool is getting momentum and it has very nice features that could make our life easier. Poetry is been kind of a headache, specially to manage conflicts and with packaging setting the right dependencies.
