Sensitive Data Log Level

When running engine on study data, the logger do not de-identify the data which makes it hard to share logs for runs on real data. It would be useful to create a custom log level that removes the exposure of the data in the logs but still offers the trace so that issues can continue to be tracked down/engine can be tested on real data and the logs can be shared with the team
