[identity-platform] authentik-based oidc test env is deprecated

The helm chart used for Authentik when running the `./configure` for the identity-platform bundle uses version 2024.1. This version relied on bitnami images for the db and redis, which are no longer available.

The version cannot simply be updated because the API has changed since then, so the configuration calls in the script will need to be updated as well.

Start with the Helm chart used by ./configure for the identity-platform bundle and inspect its Authentik 2024.1 configuration. Trace the configuration calls in the script alongside the newer Authentik API requirements. Done means the test environment configures successfully with available database and Redis images.
