docs: track 2 EOL vs track 3

Description
The docs state that track 2 will be EOL in 07-2026.
Track 3 should be released this month (note: the default docs (track-2) still say "2026-04 (predicted)")
Are those dates still accurate? This is not a lot of time to switch to a new track.
