add ui for seeing transcription settings of document

It would be very helpful to be able to see that after the fact to answer questions such as "why is the transcription quality so bad"

Start by locating the existing document UI and the transcription settings associated with a document. Determine how those settings are stored and exposed to the interface. Done means a user can inspect a document after transcription and understand which settings produced its transcription quality.
