FAS - Visually document mapping between all FAS events, the AR module, and the general ledger

From the audit recommendations:

> Prepare complete and accessible documentation of the mapping logic and data tables, assign ownership for maintaining it and establish governance so that updates are controlled, reviewed and approved before being implemented.

We can begin with the documentation as the governance can be handled via formal business sign-off in the tickets (which is part of another audit recommendation)
