SOLR - configure in test / prod (OCP)

## Description
Update / deploy the new solr into test / prod
## Details
- [ ] test
- [ ] update the deploy config + config mappings to match dev
- [ ] deploy using gha cd
- [ ] rebuild indexes / verify search
- [ ] verify namex cores
- [ ] prod _**do this outside of regular work hours and make sure namex team is in the loop**_
- [ ] create duplicates of current prod solr config and know how to roll back to current deploy (can test this in test env first)
- [ ] update the deploy config + config mappings
- [ ] deploy using gha cd
- [ ] verify namex cores
- [ ] rebuild indexes / verify search
