Use superchain registry as source of truth for superchain compatible op chains

Now that @Sabnock01 has unblocked [publishing superchain registry](https://github.com/ethereum-optimism/superchain-registry/pull/18#pullrequestreview-1655304163) to npm we should use this repo as the source of truth for things such as contract addresses and other chain config information. We can add a light build step to the superchain registry if it would help make this easier

Start by locating the current contract-address and chain-configuration sources in op-viem, then review the published superchain registry package linked in the issue. Done means compatible OP chain data comes from the registry as the source of truth, with any required registry build step documented and verified.
