Fluentbit - changes into the regex in configmap

**Describe the bug**
I need to change the fluentbit regex configmap to get more information from an application log

**Steps to reproduce**
I'm using the eks_blueprints_addons module, I have the option to activate fluentbit but I don't have the option to customize the regex within confimap

**Expected outcome**
The correct thing would be to have the possibility of adjusting this regex and adapting it to our application

Start by locating the aws-for-fluent-bit chart's ConfigMap template and its available values, then check how eks_blueprints_addons passes chart customization. Define how an application-specific regex should be supplied without breaking the default configuration. Done means the regex can be adjusted through the addon and the resulting ConfigMap is verified for an EKS deployment.
