Find ways to auto generate image names and URLs in docs

**What would you like to be added**: For each release, we need to manually update links to EKS Anywhere artifacts documentation to list the latest artifacts, such as Bottlerocket OVAs, HookOS (kernel and initrd), and others. I would like to automate this process by either:
* Finding a way to generate the name of each artifact in the docs automatically when there is a new release or
* Providing a tool the user can run to find the names of the latest artifacts

**Why is this needed**: These items can be tedious to update and can easily fall out of date.

No files, tests, or entry points are named. Start by reviewing the EKS Anywhere artifacts documentation and the release process that updates it; done means artifact names and URLs stay current automatically or a user-facing tool reliably finds the latest artifacts.
