Saving the client_id in the console.

Every time someone is signed out the client id is erased and it is necessary to re-input it when testing out different users.

It would be really nice if we could save / cache the id so we could then choose it from a dropdown menu or something when working in the console.

Start by locating the AppSync console flow that clears client_id when a user signs out, then trace where the value is entered and displayed. Define how saved IDs should be selected and cleared, and confirm that switching users retains the available choices without requiring re-entry.
