[NS1] Observability section needs improvments

the observability part seems unfinished : we show some commands with EBPF, but nothing useful neither how we can see actual status of success/deny.

Next we talk to send the logs to Cloudwatch but it is not working.

It feel like there is a lot of improvement possible (from workshop but also from the service ?) : is it possible to visualize the status on/deny of flows ? Can we saw this graphically ? (Thinking Hubble), or in a Cloudwatch Dashboard ?

Start with the observability section and its eBPF commands, then verify whether the described logs reach CloudWatch. Compare possible flow-status views using Hubble or a CloudWatch dashboard; done means the workshop explains and demonstrates a working way to see allowed and denied flows.
