Feature Request: Add Nosql Output Plugin

there doesn't seem to be support for output plugins targeting NoSQL databases such as MongoDB or DynamoDB. In many real-world ETL workflows, these types of databases are often used as output targets—especially for events, logs, or semi-structured data.

It would be great to have output plugin support for NoSQL databases like MongoDB or DynamoDB. This would make the tool more flexible and aligned with what most modern ETL systems offer.

If this direction makes sense, I’d be happy to contribute and work on implementing this feature.
