Project or config override

There should be a way to override the project or config used.

### 🎤 Pitch

If I need to interact with two different projects (dev vs prod), I currently have to update the project ID in `appwrite.config.json` which can be error-prone. Some solution that makes it easier to override some values for a particular push would be helpful
