Encore.ts integration

I've written a package for integration with [encore.ts](https://encore.dev) APIs and applications, by adapting this [example](https://encore.dev/docs/ts/tutorials/graphql) from the website. I've also folowed apollo's [integration guidelines](https://www.apollographql.com/docs/apollo-server/integrations/building-integrations). I kindly ask for suggestions and if possible inclusion into the organization for integrations.
