[FEATURE] Missing shuffle write time with Gluten

There is nothing show of shuffle write times in Uniffle with Gluten, refer code: https://github.com/apache/incubator-gluten/blob/main/backends-velox/src-uniffle/main/java/org/apache/spark/shuffle/writer/VeloxUniffleColumnarShuffleWriter.java

I think we could introduce the different phase hooks for Gluten + Uniffle, that will be easier to intergration and further development

Start with Gluten's backends-velox/src-uniffle/main/java/org/apache/spark/shuffle/writer/VeloxUniffleColumnarShuffleWriter.java to trace the current Gluten-to-Uniffle shuffle flow. Define the phase-hook boundaries needed for integration and verify that shuffle write time is exposed in the resulting metrics.
